Reinventing Shepherd’s Pie. I love me some mashed potatoes. Growing up, it was my favorite food. I don’t get them often now, but whenever St. Patrick’s day rolls around, I’m sure to have them (same with Thanksgiving). I’ve been making shepherd’s pie for awhile now, but it just dawned on me in the car this evening; why do we cover up the vibrant colors of the vegetables? It’s spring after all. Time to put away the grays, browns, and blues and bring out the yellows, oranges, and greens. I also gave up ground beef for lent, but not beef products because that would be crazy. I, instead, chose to make this shepherd’s pie with ground pork and let me say it was a smart decision. No longer is the meat a filler in the pie, it was the starring act. Next time you decide to make shepherd’s pie, maybe try ground pork instead of beef and layer it as I have done above. Enjoy.
